年人口動態統計月報年計によると、日本人の死因は悪性新生物、心疾患、脳血管疾患であり、これらの疾病の発症は生活習慣、なかでも食生活との関連が深いことから、疾病予防や健康増進のためにはテーラーメイド栄養である個々人に対応した食事の指導が求められている。本研究は日本人の健康増進に向けて20 歳代女性の個々人に対応した美味しくて栄養バランスが良く、継続・持続して簡便に活用できる中医学を基本とした薬膳およびDietary Approach to Stop Hypertension (DASH) 食を取り入れたメニューを開発し、評価したので報告する。\n方法は、メニュー開発の薬膳食材を上海科学技術出版社 小学館編:中薬大辞典の食品5767 品の中から日常の食生活に利用可能な食材65 品を選択した。日本型薬膳メニューは体質別の19 種をもとに、アメリカ保健福祉省のアメリカ国立心肺血液研究所(National Heart, Lung, and Blood Institute; NHLBI) が推奨している科学的根拠のあるDietary Approach to Stop Hypertension (DASH) 食の考え方を導入して開発した。さらに、評価は味のバランス・量・色彩・香りおよび総合評価の5 項目について 5 点評価法にて嗜好型官能評価を行った。\nその結果、主食18 品、主菜15 品、副菜29 品、汁物18 品、デザート16 品のDASH 食を基本とした19 種の体質別日本型薬膳メニューを開発することができ、嗜好型官能評価の結果、全ての献立において総合評価が4.4 点を上回っていた。\nこれらのことから薬膳食材を用い、DASH
