Noritaka"}],"nameIdentifiers":[{"nameIdentifier":"422","nameIdentifierScheme":"WEKO"}]}]},"item_10002_description_5":{"attribute_name":"抄録","attribute_value_mlt":[{"subitem_description":"要旨\n日本人の死因は悪性新生物、心疾患、そして肺炎の順番であり、免疫力の低下がリスクの要因の一つであるため、健康増進や疾病予防のためのテーラーメイド栄養である個々人に対応した食事指導が期待されている。本研究では管理栄養士が簡便に使用するための薬膳食材を用いた栄養指導のために機能性別体質分類を用いてのメニューを開発し、評価したので報告する。方法は、薬膳の知識や意識の実態調査を女子学生82名に実施した。メニュー開発の薬膳食材は、上海科学技術出版社 小学館編:中薬大辞典の食品5767品中、日常の食生活に利用可能な食材65品を選択した。日本型薬膳メニューは19種の機能性別体質分類をもとにして開発した。さらに、評価は味のバランス・量・香り・色彩および総合評価の5項目について5点評価法にて嗜好型官能評価を行った。その結果、薬膳についての意識・実態調査で薬膳を知っているは82%であり、その情報源の上位3位は大学、マスメディア、雑誌の順であった。薬膳料理を食べたことがあるは43%を占めており、薬膳のイメージは健康に良いが84%であり、薬膳が健康に寄与するのであれば薬膳を取り入れたい人は91%を占めていた。また、中医学を基本とした19種の機能性別日本型薬膳メニューを開発したが、全ての献立において総合評価が3.5点を上回っていた。薬膳食材を用いた栄養指導のための日本型薬膳メニューは嗜好的に好まれたため、日常生活において個々人に対応した献立として家庭のみならず外食産業や食品会社においても導入が可能であると考えられる。","subitem_description_type":"Abstract"}]},"item_10002_publisher_8":{"attribute_name":"出版者","attribute_value_mlt":[{"subitem_publisher":"中村学園大学薬膳科学研究所"}]},"item_10002_source_id_9":{"attribute_name":"ISSN","attribute_value_mlt":[{"subitem_source_identifier":"1882-9384","subitem_source_identifier_type":"ISSN"}]},"item_creator":{"attribute_name":"著者","attribute_type":"creator","attribute_value_mlt":[{"creatorNames":[{"creatorName":"熊谷,
