Noritaka"}],"nameIdentifiers":[{"nameIdentifier":"422","nameIdentifierScheme":"WEKO"}]}]},"item_10002_description_5":{"attribute_name":"抄録","attribute_value_mlt":[{"subitem_description":"要旨\n本研究は、保育所乳幼児の健康増進や生活習慣病の予防につながる効果的な手がかりを得るために家庭の食環境の実態を明らかにし、今後の食育指導に活用するために検討したので報告する。調査期間は平成23年11月、調査対象は福岡県の農村地域であるK町の保育所乳幼児の保護者で同意が得られた107名である。調査内容は郵送法にて実施した。調査の食品は、徳井らが開発した食物摂取頻度調査票より家庭料理で出現頻度の高い106品中80品と食物繊維や食塩相当量に寄与する食品を追加し、全146品とした。食料在庫調査票の食品は選択肢をスコア化し、その平均値を集計した。解析はエクセル統計2008 for Windowsを用いてt検定を行った。保育所乳幼児の家庭における在庫調査の結果、80%以上は19食品で、上位5品は、米、塩、醤油、味噌、マヨネーズであった。スコア化した結果、その平均値±標準偏差は穀類の米が4.7±0.5、甘味類の砂糖4.6±0.5、はちみつ2.5±1.3、種実類のごまが4.1±0.9、野菜類の上位5品は、玉ねぎ4.1±0.7、人参4.0±0.7、生姜3.7±1.1、にんにく3.6±1.2、キャベツ3.5±0.6であった。魚介類はすべて3.0以下であり、肉類ではウィンナー3.8±0.7、豚肉ばら3.5±0.8、ハム3.4±0.7の順であった。乳類は普通牛乳が4.2±0.6、低脂肪牛乳が1.7±1.0であった。食育を推進するにあたり、食材の購入など調理をする前の段階から健康のために支援を行うことが重要であり、家庭における食料在庫状況を明らかにすることができた。なお、本研究は、平成23年度に調査を実施したものであるが、本紀要の投稿にあたり、さらに現在の背景等を踏まえて改変したものである。","subitem_description_type":"Abstract"}]},"item_10002_publisher_8":{"attribute_name":"出版者","attribute_value_mlt":[{"subitem_publisher":"中村学園大学薬膳科学研究所
