{"created":"2023-06-19T09:16:53.564994+00:00","id":254,"links":{},"metadata":{"_buckets":{"deposit":"59639867-9d7a-446f-aef9-a34092afd5a4"},"_deposit":{"created_by":17,"id":"254","owners":[17],"pid":{"revision_id":0,"type":"depid","value":"254"},"status":"published"},"_oai":{"id":"oai:nakamura-u.repo.nii.ac.jp:00000254","sets":["27","27:35"]},"author_link":["8","249","7","244"],"item_10002_biblio_info_7":{"attribute_name":"書誌情報","attribute_value_mlt":[{"bibliographicIssueDates":{"bibliographicIssueDate":"2010-04-05","bibliographicIssueDateType":"Issued"},"bibliographicIssueNumber":"3","bibliographicPageEnd":"60","bibliographicPageStart":"51","bibliographic_titles":[{"bibliographic_title":"中村学園大学薬膳科学研究所研究紀要"},{"bibliographic_title":"Proceedings of PAMD Institute of Nakamura Gakuen University","bibliographic_titleLang":"en"}]}]},"item_10002_description_5":{"attribute_name":"抄録","attribute_value_mlt":[{"subitem_description":"(summary)\n児童の食生活や健康状態において、魚嫌いや魚離れに関する情報が氾濫しているが、実際に児童の魚離れや魚介類に関する報告は少ない。そこで、児童の魚介類に対する意識・嗜好の実態を明らかにすることを目的に、生活環境の異なる市街部と農村部で調査を行い、比較検討したので報告する。対象および調査期間は市街部F市10校の5・6年生の児童1,082名(2002年10月~11月)、農村部U郡17小学校の5・6年生の児童1,183名(2003年6月~7月) である。調査は無記名の自記式質問紙調査法にて実施したものを基礎データとした。調査項目は、児童の食意識、魚介類のイメージ、摂取状況、栄養知識、知名度、嗜好等である。解析は、クロス集計を行い、χ2検定を用いた。魚介類の嗜好に関しては1%レベルで有意差が認められ、魚が嫌いな児童は市街部に比べ農村部が高い数値を示し15.3%、17.5%であり、嫌いな理由は骨がある、くさい等であった。児童の魚介類の栄養知識は、農村部に比べ市街部が有意に高値を示したが、科学的根拠のない情報を得ている事が伺えた。魚嗜好のイメージでは両地域で共通して、おいしさと食べやすさの要因が深く影響していた。また、魚介類の摂取頻度や調理法の知識やその食体験に地域差は認められなかった。本研究において、市街部と農村部の児童に大きな差は認められず、魚はおいしいというイメージを持ち、魚が嫌いな児童は少ないという結果を得た。また国民栄養調査、食品群別摂取量の魚介類の年次推移よりも、魚離れが急に起こっているとは考えにくい事が示唆された。","subitem_description_type":"Abstract"},{"subitem_description":"(summary)\nNutrient intakes according to age classes including schoolchildren in the national nutritional survey in fiscal 2000 showed an insufficient carbohydrate intake and an excessive fat intake in children aged 7-14 years. This problem may be solved by recommending intakes of rice as a staple and cereals and forming the habit of having Japanese low-fat dishes consisting of fish and shellfish as a main side dish, soybean products, and vegetables. As a basic study to improve reduced fish intake and form healthy dietary habits involving fish, we developed a dietary education program for the ‶formation of a proper defecation habit by Japanese-type medicated diets\" using the precede/proceed model as a behavioral change model developed by Green, L.W. et al. in the U.S., and evaluated its effects. An awareness/present status survey of fish and shellfish was performed in 1,082 children in the 5th/6th years of primary school in urban areas and 1,183 in rural areas in F Prefecture.
