| 内容記述 | 1.実験に供したアサカゼ,愛知千本旭,紅千石,農林18号,の4品種はいずれも福岡県における奨励品種で,品質は上質の下に属している。 2.一般分析値,アミロース含量,アミロースおよびアミロペクテンのグルース重合度を測定したが,品種間における大差はみとめられなかった 3.しかし他県産の粳米澱粉のアミロース含量,アミロースのグルコース重合度と比較した場合,福岡県産の粳米澱粉は,アミロース含量少なく,そのグルコース重合度も小さく,米澱粉としてすぐれたものであるごとがわかった。この要旨は第12回日本家政学会総会(於東京家政大学)で発表した。最後に終始御指導いただきました本学末次教授に深謝します。 | |||||

| 内容記述 | The starches of Asakaze, Aichisenbonasahi, Benisengoku Norin No. 18 were examined to get some informations cocerning their molecular structure. The Amylose- and Amylopectin contents of the starches were determined by the lodine Complex Formation Method, and the following results were obtained: Amylose……16-20% Amylopectin……80-84%. The chain length of the separated amylose and that of the amylopectin were also determined by Periodate Oxidation Method and the following results were obtained: Amylose……About 250 molecules of glucose Amylopectin……About 24 molecules of glucose. | |||||
