| 内容記述 | The enzymes in sweet potatoes act on the constituents of them after their harvest. These enzymatic activities are influenced by temperature, humidity and etc. By controlling these conditions, It is desirable to find out the best method to prevent the enzymatic nutrient loss of the stored potatoes. For this purpose, the next four tentative methods were examined: (1) Storage in room temperature. (2) Storage in room temperature after 3day-chilling at O-1℃. (3) Cold storage at O-1℃. (4) Storage in warm state, (Incubated at 37℃.) The results are as follows: (1) The cold storage was the best method among them to hold the good qualities. (2) The warm storage was the second one for this purpose. The auther could conclude that the following procedures are necessary to get good results in the potato atorage: (1) To keep the potato weight in constant through the storage. This condition was obtained in the cold storage of 35 days. (2) To diminish rapidly the water content of the potatoes in such a case of warm storage. In this case, 39% of fresh potato water was lost through the period of storage. | |||||
