約)\n消化管はあらゆる食物成分に遭遇する感覚器官であり、食物成分の情報はホルモン系および迷走神経系を介して中枢に送られて記憶されている。食物の認知情報による生体応答は食物の摂取、消化、吸収、カロリー摂取、有害物質の除去、内分泌の活性化、代謝まで制御している。化学物質の認知はあらゆる生物が行っており、生態環境に適応するための基本的なシステムである。化学物質の認知というケミカルセンシングに関して味覚、嗅覚の受容体の同定、脳イメージング技術、ホルモン分泌、記憶と行動の相関が明らかになってきている1-5。ここでは消化管における化学物質のセンシングを行う腸内分泌細胞(enteroendocrine cells)のセンシング受容体と分泌する消化管ホルモンの作用を通して食物摂取における作用機構からT1R レセプターとT2R
