@article{oai:nakamura-u.repo.nii.ac.jp:00000203, author = {陳, 膳盈 and 大仁田, あずさ and 徳井, 教孝 and 三成, 由美}, issue = {5}, journal = {中村学園大学薬膳科学研究所研究紀要, Proceedings of PAMD Institute of Nakamura Gakuen University}, month = {Sep}, note = {(要旨) 美容に寄与する日本型薬膳を簡便に提供するために、中医学の基礎理論を基本として、美容・美肌と関わりのある薬膳食材と潤腸通便作用のある食材つまり便秘改善に寄与す薬膳食材について整理したので報告する。 薬膳食材の分類は、中医学の基礎理論を基本にして、上海科学技術出版社、「中薬大辞典」使用し、帰経で肝・心・脾・肺・腎より皮膚、毛髪、月経、便秘と関わりのある薬膳食材を選択した。分類は、臨床症状反応による五性の温・熱・涼・寒・平と五味の甘・酸・苦・辛・咸と人体のどこの臓腑に薬効があるのかを示す帰経の肝・心・脾・肺・腎・胆・小腸・大腸・胃・膀胱を行った。 その結果、美容に関わりのある薬膳食材は245品であった。五性では平が29.0 %、体を温める温・熱が32.2%、冷やす寒・涼が38.8%であった。五味では甘味が56.7%と高い数値を示し、帰経では高い数値を示した肝が20.4%、脾が19.2%、肺が18.6%であった。次に潤腸通便作用のある薬膳食材は116品であった。五性では体を冷やす寒・涼が42.4%と高い数値を占め、五味のトップでは甘味が56.6%を占め、帰経では表裏関係の脾と胃が41.9%、肺と大腸が29.8%と高い数値であった。中医学の美容薬膳食材は五臓の肝、心、脾、肺、腎に入る食材をバランスよく摂取することで肌を美しく保つことできる。 以上の結果より、美容薬膳食材は五性で体を温める、冷やす、平が各約30%を占め、季節の変化に順応することが重要だと考えられた。帰経で高い数値を占めた肝は血流量を調整し、肺は大腸の通暢作用によって維持され、肌・毛髪に関わりがあり、正常であれば、皮膚は光沢を保つと考えられている。潤腸通便薬膳食材は五性で寒・涼性の食材が多く、乾燥しておこる腸燥と関わりが深いと考えられる。これらの薬膳食材を毎日継続持続して摂取することで肌を美しくする効果が期待できると考えられる。, (Abstract) To facilitate serving of Chinese medical diet with potential beauty effect in the Japanese style, the foodstuff of Chinese medical diet with beauty effect or Run Chang Tong Bian, or constipation-improving, effect was identified based on the basic principle of traditional Chinese medicine. After establishment of the inclusion criteria based on the basic principle of traditional Chinese medicine, the foodstuff of Chinese medical diet was classified according to “Zhongyao Dacidian( dictionary of Chinese medicine)”(Shanghai Scientific & Technical Publishers) by the following: five natures indicating clinical responses( cold, cool, hot,warm and neutral); five tastes( pungent, sweet, sour, bitter and salty); and channel tropism indicating which zang fu(organ) the foodstuff is effective for (liver, heart, lung, spleen, kidney, small intestine, gall, stomach, large intestine, urinary bladder and triple warmer). Of the foodstuff of Chinese medical diet studied, 245 items were shown to have beauty effect. By five natures, 29.0%, 32.2%and 38.8% of them were “neutral,” “hot/warm( body-warming),” and “cold/cool( body-cooling)”, respectively. By five tastes,the percentage of “sweet” was the highest, accounting for 56.7% of them. Their breakdown by channel tropism was 20.4% liver,19.2% spleen and 18.6% lung. Next, 116 items were identified as having Run Chang Tong Bian( constipation-improving) effect. By five natures, “cold/cool( body-cooling)” accounted for the largest percentage of 42.4%. The most common taste among the five was “sweet,” accounting for 56.6%. By channel tropism, spleen and stomach, and lung and large intestine, which are both in front-back relationship, accounted for large percentages of 41.9% and 29.8%, respectively. By five natures, “body-warming,” “body-cooling” and “neutral” each accounted for approximately 30% of the food stuff of Chinese medical diet with beauty effect, emphasizing the importance of adjusting to seasonal changes. The liver, accounting for the highest percentage among the channel tropism, controls blood flow, and the lung, also accounting for a high percentage, is maintained through the constipation-improving effect in the large intestine. Thus, these zang fu may be associated with the condition of skin and hair: if they are normal, skin is kept shiny. Among the foodstuff of Chinese medical diet with Run Chang Tong Bian effect, the “cold/cool” items were the most common, suggesting the close relationship of the effect with dryness-induced changzao( dry intestine).
